Parmesan Crusted Zucchini
What I did with the first zucchini was make a side. I was making chicken parmesan and figured I could utilize the oven and large pan for something else. I found a recipe online for Parmesan Crusted Zucchini, which 1) sounded delicious, 2) sounded simple and 3) I had all the ingredients already in the kitchen. I didn’t use the entire zucchini for this dish, but probably about half of it. The effort just consisted of chopping the zucchini and mixing it in a glaze that included the following ingredients:
- Sesame Oil
- Olive Oil
- Cayenne Pepper
- Garlic Salt
- Sesame Seeds
- Parmesan Cheese
I was happy with the results as it turned out to be a great side for the chicken parmesan.
The second zucchini recipe came from growing a much larger zucchini and a desire to make some zucchini bread. I looked online for options hoping to find a different take on ordinary zucchini bread. I was happy to come across a recipe for Orange Chocolate Chip Zucchini Bread. I already had a few of the ingredients (eggs, sugar, vegetable oil, vanilla extract, walnuts, salt, baking powder, cinnamon, zucchini) so I only had to pick up a few more items at the store (chocolate chips, flour, an orange, baking soda, nutmeg).
